Breakfast Casserole

This week Michael chose for me to make a breakfast casserole. I personally was just glad that he decided to step away from a certain cookbook, at least for now.
I'm glad that he is also picking rather easy meals to make. It's been fun learning them, and knowing that I have some easy stuff if I suddenly remember I have to have a meal prepared in an hour for some gathering;)
Anyways, so with this. We layered the bottom of the pan with croissant rolls, then put the meat that was previously prepared over the rolls. Next mixed together some eggs, milk, and other stuff and pored that over the meat. Then, just let it bake for about 30 or so minutes.
Once we took it out, and let it cool, we dug in. And if I must say so myself, it was rather delicious! Michael loved it, so that's definitely good!
To top it off, the night we do our cooking is Thursday nights. And well this week it also happened to be the marker of two months we have been married!!! So, it was an extra special night;)

Lately

Well, I'm obviously behind. So, to catch you up on what we have tried lately.
Week before last I made this Apple Crisp thing. I cooked it in the slow cooker. Chopped up apples, then added the "crust". Then slow cooked it for 2 hours. It was okay, just not what Michael and I were expecting I guess you could say. We were hoping that the crust would be more crunchy. Oh well.
Last week we tried a taco bake thing. It reminded me an awful lot of the frito pie. Basically, we put some meat, salsa, and mayonaise together. Then put that in a pan, put cheese over that, then crunched up some tortilla chips and topped it with cheese. put it in the oven and let it bake.
It was really good. Just not a let over meal. So, we basically need to learn how to make smaller servings. Ha.

Sloppy Joe Bake

Last week Michael picked out a recipe called Sloppy Joe Bake. It's a recipe he found in his Grandma's cook book. I personally was really nervous about it just because it didn't sound like something I would like too much. 
You put together the sloppy joe mix, then fixed some bisquick, put that around the bottom of the pan, then put the meat in. Next simply put it in the oven. Well, just as I feared, it wasn't for me. It was too bisuity. I'm not much for that kind of biscuit personally, so it just didn't cut it for me. Michael didn't mind it that much, so I can make it for him again. But I told him that might have to be when we have kids though. Ha.
